Spelt is an ancient grain (along with Einkorn and Emmer) and is lower in gluten and higher in protein than more modern industrial wheat. It has a nutty flavor and is not as dense as some whole wheat breads can be. Now we’ve paired it with organic raisins and cinnamon which makes for a delicious and nutritious toast with butter.
