Spelt is one the ancient grains (along with Einkorn and Emmer) and is lower in gluten and higher in protein than more modern wheat varieties. It has a nutty flavor and is not as dense as a whole wheat bread can be. We think pairing it with sunflower seeds makes for a delicious and nutritious loaf.
