What is “Trigo?”
It’s a new location we’re in the middle of opening in Westport.
It’s really a second location because we’re not moving from the farm in Willsboro.
This new addition will help us expand production and bring more organic breads, local flour and farm foods to the area.
Trigo will focus as a whole grain bakery, farm store and community cafe that specializes in handmade baked goods using freshly-milled organic and local flours.

These are one of four recycled windows I’m stripping and sanding to become the cabinet doors of a display case for Trigo, our latest secret project that I think everyone knows about. 🤣
Trigo [pronounced “tree-go”] is Spanish for wheat or grain, and is essentially at the core of what we do.
The Bakery
While the majority of our artisan breads will continue to be baked in Willsboro, Trigo will give us an opportunity to feature freshly milled whole grains in pastries, danishes, scones, cookies, Mallorca buns, etc… in a self-serve/farm store/cafe-like setting.
We’re planning to be open sometime late May.
We’ll be having a pop up market on Sunday May 7th. Come check us out.

The Farm Store
As long time members of Adirondack Harvest, we’re 100% committed to supporting local food and farms in the Adirondack, so you can expect to find many local foods in our farm store.
As a community-driven space, we are happy to host meetings, cooking classes, and farm to table dinners. Check our event page for updates.
We’ll have lots more info to come about the new space as it unfolds.
It should prove to be worth the wait!
